Inheriting a bunch of old bakeware (and ancient recipe books!) is bittersweet, in the manner it was obtained, as well as the collective familial grief, etc. And at the same time, I had been wanting a good set of Pyrex / CorningWare bakeware (especially after our recent trip to the Corning Museum of Glass).
I hadn’t planned on obtaining the rest of the stuff our new kitchen needed in this way, but here we are now and we’re gonna make Nana proud.

Easy Cheeseburger Casserole Bake Recipe
This cheeseburger casserole is everything I want on a winter weeknight: warm, cheesy, filling, and made with pantry staples. It’s inspired by the flavors of a classic cheeseburger, baked into a cozy noodle casserole that comes together easily and feeds you for more than one night.
Ingredients
(Serves 4)
½ lb ground beef
8 oz wide egg noodles
2 tbsp olive oil
2 tbsp all-purpose flour
1½ cups whole milk
2½-3 cups shredded cheddar cheese (white, yellow, or a mix)
1 tsp McCormick Grill Mates Montreal Steak Seasoning (or to taste)
Himalayan pink salt & black pepper, to taste
½ cup panko breadcrumbs
1 tbsp olive oil or melted butter (for topping)
Instructions
1) Preheat the oven to 375°F. Lightly oil a 2.5-quart covered baking dish.
2) Cook the noodles in salted water until just shy of al dente. Drain and set aside.
3) Brown the beef
Heat 1 tbsp olive oil in a skillet over medium heat. Add ground beef and season with Montreal steak seasoning, salt, and pepper. Cook until browned and fully cooked. Set aside.
4) Make the cheese sauce
In the same skillet, add 1 tbsp olive oil and whisk in the flour. Cook for about 1 minute. Slowly whisk in the milk and cook until thickened, 3-5 minutes.
Lower heat and stir in 2 cups of shredded cheddar until smooth and creamy.
5) Assemble the casserole
Stir the cooked noodles and ground beef into the cheese sauce. Transfer everything into the prepared baking dish and spread evenly.
6) Add the topping
Mix panko breadcrumbs with 1 tbsp olive oil (or melted butter). Sprinkle over the top, then finish with the remaining shredded cheese. Add a little black pepper.
7) Bake
Cover with the lid and bake for 20 minutes.
Remove the lid and bake another 10-15 minutes, until bubbly and lightly golden on top.
8) Rest & serve
Let rest for 5-10 minutes before serving. This helps it set and makes leftovers even better.

Cozy Notes
☆ This reheats beautifully for next-day lunches.
☆ You can add a splash of milk when reheating to loosen the sauce.
☆ If you like it extra cheesy, don’t be shy with that last handful of cheddar.
