It’s rich without being heavy. Flavorful without being complicated. And made slowly, in a vintage casserole dish that reminds me that good things are meant to last.

Why This Lasagna Is Different

Most homemade lasagna is… fine.

But it’s often:

This version avoids all of that by focusing on three things:

✔ A “luxe” ricotta layer with depth and richness

🧺 Ingredients

Pasta & Cheese

  • 16 oz lasagna noodles
  • 15 oz whole milk ricotta
  • 16 oz whole milk mozzarella, shredded
  • 8 oz grated parmesan
  • 3-4 oz extra sharp white cheddar (optional)

🔥 Step 1: Make the Flavor-Rich Meat Sauce

Heat a large pan over medium heat and add a generous drizzle of olive oil.

Add diced onions with a pinch of salt and cook for 5-7 minutes, until soft and glossy.

Add ground beef and brown completely, breaking it up as it cooks.

Season with:

Pour in tomato sauce and simmer on low for 20-30 minutes.

Taste and adjust salt and pepper as needed. You want it rich, savory, and balanced.


🧀 Step 2: Make the Luxe Ricotta Layer

In a bowl, mix:

🍜 Step 3: Cook the Pasta

Boil noodles in well-salted water until just shy of al dente.

🔥 Step 5: Bake

Cover with lid (or foil if needed).

Bake:

  • 30 minutes covered
  • Remove lid
  • 15-20 minutes uncovered

Until bubbly and lightly golden.

Let rest 15 minutes before slicing.

    I haven’t usually made good lasagna. I don’t layer it well and the top noodles were always dried out. My SIL made lasagna rolls when we visited one time and the clouds parted and the sun broke through. THAT I san do successfully. I think I will incorporate your cheese and sauce recipes into the technique I feel safe using the next time I make them. Thanks for the variations on the them.
